Eggplant, Tomatoes and Squash

The season shift into summer produce is going to be amazing at The Simple Farm.  The centerpiece of our farm, tomatoes, are looking really sweet.

Baskets of heirlooms like Yellow and Black Krim will be at Thursday's market along with those delicious yellow pears which are less acidic and the cherry tomatoes.

We tend to have a prolific eggplant season and this will be no exception. I planted some new varities such as Green Apple, Aswad (an Iraqi one) and Cambodian eggplants. We also have the more common eggplants such as the Japanese, Black Beauty and the Rosa Bianca. So, get the eggplant recipes out and start planning for some fabulous summer meals that surround very nutritional eggplant.




Summer squash is one of the most tasting vegetables - EVER. We're even enjoying it raw. Lately, I simply saute it in (tons) of butter, squeeze some lemon on top and fresh snipped thyme. Can't get much better than that.

When you think of eating in the summer months....think about everything that has water in it....it's what hydrates us....eggplant, tomatoes, squash, watermelon, cucumbers, melons, apples, strawberries.

Don't forget, we're shifting summer market hours - Thursdays from 9 - NOON and 4 - 6. We're also contemplating a short Saturday morning market and will announce that soon. It would only run about 7 - 8 weeks.
