2 cups butternut squash
1 can coconut milk
about 1/3 cup water
Curry to taste
In a deep large saucepan fry up butternut squash till it's soft. Then . . .
Add coconut milk. Stir on medium to low heat. Then . . .
Add curry. Add water as needed. Mash with a potato masher.
You could also add a diced carrot and some sauteed onion.
Serve with a sprig of rosemary!
